Creamy Cheddar Cheese Soup


¼ cup butter or margarine
1 medium onion, chopped
¼ cup flour
3 cups chicken broth
3 cups milk
4 cups Cheddar cheese, shredded


In 3 qt. saucepan over medium high heat, in
hot butter or margarine, cook onion until tender,
about 5 min. Stir in flour & cook until flour
has blended in with onion mixture. Add chicken broth;
cook, stirring constantly, until mixture is slightly
thickened. Add milk & heat to boiling, stirring
constantly. In covered blender container at medium
speed, blend about ¼ of milk mixture at a time until
smooth. Return to saucepan & over medium heat just
to boiling; remove from heat. With wire wisk or slotted
spoon, stir cheese until melted. If cheese does not
melt completly, cook over very low heat about 1 min.,
stirring soup constantly.
