Cheery Fudge Tarts


3 (1 oz.) squares unsweetened or semi-sweet
chocolate
1 (14 oz.) can Eagle Brand Sweetened
Condenced Milk
¼ tsp. salt
¼ cup water
2 egg yolks
1 tsp. almond extract
1 cup (½ pint) Borden Wwhipping Cream, whipped
14 (3") prepared tart-size graham cracker
crumb or pastry crusts
1 (21 oz.) can cherry filling or topping, chilled

In heavy sausepan, over medium heat, melt chocolate with
sweetened condenced milk & salt. Cook & stir rapidly
until very thick & bubbly, 5 to 8 min. Add water
& egg yolks; Cook & stir rapidly until mixture thickens
& bubbles again. Remove from heat; stir in extract.
Cool 15 min. Chill thoroughly, about 30 min.; stir.
Fold in whipped cream. Spoon into crusts. Chill 1 hr. or
until set. Top with cherry filling.
