City Chicken
1/4 cup milk
4 eggs
2 tsp finely chopped garlic
4 Tbls vegetable oil
1/4 tsp salt
1 cup bread crumbs
1 cup seasoned parmesan cheese
4 lb boneless pork loin
1 pkg wooden skewers
Cube the pork loin into 1 inch squares and place in bowl. Add
garlic, salt and vegetable oil. Mix thoroughly, the place in
refrigerator to marinate for no less than 3 hours (overnight
best).
Skewer meat. Beat egg and milk together, and mix parmesan cheese
and bread crumbs together. Roll the skewered meat firs in egg
mixture, then in bread crumbs to coat. Brown on stove in
vegetable oil, then finish cooking on a cookie sheet in a 300
degree oven for 1 hour.
