Classic Turkey Divan

cup margarine or butter
cup flour
1/8 tsp. ground nutmeg
1 cups chicken broth
cup grated Parmesan cheese
2 tbsp. dry white wine
cup whipping (heavy) cream
1 lbs. fresh dried broccoli, cooked & drained
5 lrg. slices of cooked turkey or chicken breasts
(about lb.)
cup grated Parmesan cheese

Heat margarine in 1 qt. saucepan over low heat until
melted. Stir in flour & nutmeg. Cook, stirring
constantly until smooth & bubbly; remove from heat.
Stir in broth. Heat to boiling; stirring constantly.
Boil & stir 1 min. remove from heat. Stir in cup
cheese & the wine. Beat whipping cream in chilled bowl
until stiff. Fold cheese sauce into whipped cream.
Arrange hot broccoli inn ungreased rectangular baking
dish, 11x7x1". Top with turkey. Pour cheese sauce
over turkey. Sprinkle with cup cheese. Set oven
control to broil. Broil with top 3 to 5" from heat until
cheese is bubbly & light brown.
