Carrot Salad

1 large carrot, peeled and cut into matchstick
size pieces or shredded in a food processor
1/2 cup (125 ml) water
1 tsp vinegar
1 tsp sugar
A pinch of salt

Combine all the ingredients in a small bowl and stir to combine.
Allow to marinate for at least 15 minutes, or as much 24 hours.  Drain
and discard the liquid before serving.  Makes about 1/2 cup (125 ml)
to serve 4 to 6.
