Beef & Black Bean Burritos
Quick fixin's with a Southwest flare.
Servings: Serves 8
1 package (1-3/4 to 2-1/2 lbs.) heat-and-serve beef pot roast
3/4 cup canned black beans, rinsed and drained
1/2 cup prepared chipotle salsa
-- flour tortillas
Transfer liquid from 1 package pot roast to medium saucepan.
Cut pot roast crosswise into 4 pieces shred with two forks.
Add beef, black beans and chipotle salsa to liquid in pan.
Heat over medium heat until hot stir occasionally.
Place beef mixture in tortillas, add toppings (sour cream, shredded co-jack cheese, chopped cilantro, sliced green onions, etc.) as desired.
