Perfect Breakfast Pizza
Surprise your family with pizza for breakfast.

1 lb. sirloin steak
1 prepared pre-baked pizza shell (12-inch)
1 can black beans (drained)
1/3 cup salsa
4 eggs
1/2 cup tomatoes, seeded and chopped
1 Tbsp. chopped fresh jalapeno
1 cup Co-Jack cheese, shredded
1 Tbsp. cilantro, chopped




Preheat oven to 450ºF.
Cut sirloin steak into small pieces 1/8-inch thick and 1-inch long.
Spray non-stick skillet with vegetable cooking spray. Cook sirloin over medium heat stirring constantly until no longer pink. Remove from heat.
In a separate skillet, scramble eggs. Set aside.
Set aside 2 Tbsp. black beans for garnish. In a small bowl, mash remaining beans with a fork until smooth.
Place pizza shell on a cookie sheet and layer with mashed beans, salsa, scrambled eggs, sirloin, tomatoes, jalapenos and cheese. Top with cilantro and reserved whole beans.
Bake at 450ºF for 8-10 minutes or until cheese melts.
