Classic Turkey Divan


¼ cup margarine or butter
¼ cup flour
1/8 tsp. ground nutmeg
1½ cups chicken broth
½ cup grated Parmesan cheese
2 tbsp. dry white wine
½ cup whipping (heavy) cream
1½ lbs. fresh dried broccoli, cooked & drained
5 lrg. slices of cooked turkey or chicken breasts
(about ¾ lb.)
½ cup grated Parmesan cheese

Heat margarine in 1 qt. saucepan over low heat until
melted. Stir in flour & nutmeg. Cook, stirring
constantly until smooth & bubbly; remove from heat.
Stir in broth. Heat to boiling; stirring constantly.
Boil & stir 1 min. remove from heat. Stir in ½ cup
cheese & the wine. Beat whipping cream in chilled bowl
until stiff. Fold cheese sauce into whipped cream.
Arrange hot broccoli inn ungreased rectangular baking
dish, 11x7x1½". Top with turkey. Pour cheese sauce
over turkey. Sprinkle with ½ cup cheese. Set oven
control to broil. Broil with top 3 to 5" from heat until
cheese is bubbly & light brown.
